Recipe: Tuna Cakes

Tuna cakes are easy to make, taste amazing and are perfect for taking to work for lunch the next day. This recipe is a little bit messier to make than the other options as it involves using your hands to form the cakes but it’s definitely worthwhile as it’s quick, easy and only requires three ingredients. All you need is:

1 large tin of tuna

400g of potatoes

Frylight Infuse Garlic Oil

Step 1: Boil the potatoes for 20 minutes before mashing them

Step 2: In a separate bowl, mix the tuna with 3 sprays of the garlic oil

Step 3: Stir the tuna mix into the potatoes

Step 4: Divide the mix into four rounded cakes – this part is fairly messy so it’s a good idea to grab a chopping board

Step 5: Fry each cake in 3 sprays of the Frylight oil for 3 minutes on each side

Once you’re done, you can leave the cakes to cool for an hour or so before popping them in the fridge. The next day they’re good to go with a bag of salad (two cakes with half a bag). Alternatively, you could prepare your own salad to eat – but of course that depends on how much time you have. Either way, you have two delicious, healthy lunches sorted!
